Leafy Greens and Glaucoma Risk

A US study has found that people with a diet high in leafy greens have a lower risk of developing glaucoma. Apparently the nitrate from the leafy greens is converted into nitric oxide which increases blood flow. Dark leafy greens such as kale and spinach contain the highest levels of nitrate. Organic Green Barley also contains high concentrations of nitrate and also contains high amounts of antioxidants, chlorophyll and protein.
