Grown as long ago as 5000BC, this delicious grain, which is high in protein and B Vitamins, has been embraced by many people with gluten intolerance. Whereas other modern grains have been modified over time to produce more gluten (for the bakery industry) and greater yields, Spelt has remained unchanged. Spelt, known as Farro (Italy), Dinkle (Germany) and Farrum (Roman times), is protected from insect attack and outside elements due to its hard husk.
